Potato Fennel Gratin

This was a terrific side to our fish that we had the other night. I again, halved the recipe, and it still made quite a bit. I splurged and bought the Gruyere cheese ($8), but I still have half of it left. I definitely think you could experiment and use a number of different cheeses. I also didn't use as much onion and fennel, but my husband thought that it needed more salt and I agreed. Overall it was delicious! I just finished eating the last of it for my lunch today.
