Pecan Shortbread

The pecan shortbread was delicious... I suppose any cookie with that much butter would be. I followed the recipe exactly, patiently refrigerating the dough and everything. I rolled them to 1/4" for the kids to have fun with, then I rolled them to 1/2" like she instructed (but strangely never pictured).

Either way they tasted great. I had this cracker cutter that my mother-in-law gave me that worked well to make it look like that store-bought pure-butter shortbread. Where I could see eating multiples of the smaller cookie, you'd probably only eat one of the thick ones (unless you're pregnant...).
