Parmesan Smashed Potatoes

Dish #2 for our Ina Garten night was her delicious parmesan smashed potatoes. I made a few changes to make it a bit healthier.

- Whole Milk instead of Half and Half
- Light sour cream instead of regular
- Margarine instead of butter
- Baked Idaho potatoes (I used 4) instead of red potatoes (just cause I had them)

We all enjoyed the potatoes. They were very creamy and smooth. I liked them without the skins. My hubby prefers skin on his potatoes, so I will keep some on next time.

I put the pan under the broiler for about 4 minutes to brown the parmesan on top. I used real parmesan on top and in our opinion, it needed it.
