Perfect Smashed Potatoes

I made the mashed potatoes without the parm cheese. I kinda forgot to add it. Like Shannon, I didn't use red potatoes, mainly cuz I read the recipe too fast when making my grocery list! Even with the wrong potatoes, and without the cheese, these were really good. I thought it was the perfect consistancy, not to thick and not too thin. I couldn't decide about the skins, so I peeled strips off the potatoes, made them look like zebra potatoes leaving half the skins on. I thought it was the perfect amount of skin. I will be making these again. I even used her tip about making them ahead of time and reheating in the oven. It was very convienent for having company over for dinner, less to do at the last minute.
