Parmesan Smashed Potatoes
This was a tasty recipe! The only thing I substituted was 3/4 cup whole milk and the rest half-and-half. I also used Pecorino(sheep's milk) cheese...my husband and I fell in love with it while in Italy.

I also tried the mashed potatoes and thought they were great. However, the book says that 3 lbs of potatoes will make enough to serve 6-8 people. I cut the recipe by a third (I used 2 lbs of potatoes) and I had enough to feed at least 10 people!
