Fiesta Chicken Casserole (page 254)
This was so good, and I can’t wait to cook it again. I made this as if it were a regular recipe and not a left-overs meal. I just boiled some chicken and then shredded it. Most people who know me, know I don’t like left-overs, but I plan on using this recipe after Thanksgiving this year with turkey to switch things up a bit

Darby, you have to slow down...you are making the rest of us look bad! Just Kidding, or course keep cooking away, you are inspiring to the rest of us! :) This recipe looks like it would be a good kid friendly dish, I'm gonna have to look this one up.
Ooo...that looks yummy! We will have to try this one- thanks for staying on top of cooking and blogging for all of us! This pregnancy I am NOT wanting to be in the kitchen at all!
Well I hadn't posted in almost 2 months....I had to clear some space on my camera hehehehe!
